Matt helped build a London restaurant supply chain for his Cornish butcher, Philip Warren, for 10 years. He then returned to his Devon Farm. Taking inspiration from his travels to the iberico pig farmers in Extremedura, he realised the potential of fattening sheep no longer fit for breeding. He farms for biodiversity. The more diffferent plants they eat the happier they are and the better they taste. He sells his sheep to Philip Warren who in turn sell to London’s top chefs.
